Ingredients
1 cup cottage cheese
6 eggs
2 Spring Onion, finely chopped
½ cup baby Spinach, roughly chopped
½ Red Capsicum, finely chopped
50g Ham (optional)
2 scoops Lupin
Method
- 1 Preheat the oven to 170C. Grease a large 6 hole muffin tray with olive oil spray.
- 2 In a large bowl whisk together the eggs, cottage cheese and lupin until smooth. Then mix in the vegetables and ham if using.
- 3 Divide mixture amongst holes and then place in the oven for 20mins or until egg is just cooked.
- 4 Allow to cool for 5mins in the tray before running a knife around the edge of each hole and lifting the egg bites out.
