Ingredients

1 packet konjac noodles (400g)

1 tablespoon water

1⁄2 onion, finely sliced

1 carrot, peeled, julienne

1 small zucchini, julienne

1⁄2 red capsicum, julienne

1 broccoli head

8 snow peas

1 tablespoon oyster sauce

2 tablespoons soy sauce

Method

  • 1 Julienne your vegetables, trim your snow peas and cut broccoli into florets.
  • 2 Prepare konjac noodles as per packet instructions and set aside.
  • 3 Heat a frying pan or wok on the stove and begin cooking veggies.
  • 4 Add sauces, stir to combine.
  • 5 Stir fry over medium heat for 4 minutes, until the vegetables are cooked to your liking. Stir through konjac noodles.
  • 6 Serve one portion and keep the remainder in an airtight container.
