Ingredients
100g fillet of fresh salmon
3 slices of tomato
2 sprigs of fresh dill
1 tablespoon olive oil
Juice of half a lemon
Salt and pepper
1 clove garlic, crushed
1 tablespoon slivered almonds
1 cup green beans, trimmed

Method
- 1 Pre-heat oven to 180°C.
- 2 Place the fillet of salmon on a sheet of baking paper. Top with sliced tomato, dill, half of the olive oil, lemon juice and season with pepper if desired.
- 3 Wrap baking paper around fish to form sealed parcel, place on a baking tray and bake in the oven for 10-15 minutes or until cooked to your liking.
- 4 Meanwhile heat remaining oil in a frying pan over medium heat. Add garlic and slivered almonds to pan and sauté for 1 minute. Add beans and sauté for 2-3 minutes.

Serve salmon with the beans.
