Lupin Pumpkin Soup – With Low Carb Croutons

Ingredients

Soup:

1 L Formulite Vegetable Lupin Soup

1 Kg Pumpkin, peels and seeds removed

1 Onion, quartered

2 Cloves garlic, crushed

Salt and Pepper, to taste

2 Tbsp Greek yoghurt

Parsley, to serve

 

Croutons:

1 Wholemeal pita bread

Spray of olive oil

1 Tsp mixed herbs

Method

  • 1 Chop pumpkin in to 1-2 inch chunks and then add to a large saucepan along with onion and garlic.
  • 2 Make up 1L of Formulite Vegetable Lupin Soup and pour over veggies.
  • 3 Place saucepan on high heat and bring to the boil, reduce and simmer for 10 minutes or until pumpkin is tender.
  • 4 Meanwhile, preheat oven to 180֯ . Place pita on a large baking tray and lightly spray with oil. Sprinkle over herbs and bake in the oven for 7-10 mins, until golden and crunchy. Allow to cool slightly before breaking the pita into small 'croutons'.
  • 5 Use a stick blender or food processor to puree the pumpkin into a smooth soup. Add the soup back into the saucepan and bring to a steady simmer. Season with salt and pepper before serving.
  • 6 Top with Greek yoghurt and parsley to serve.
