100g fillet of fresh salmon
3 slices of tomato
2 sprigs of fresh dill
1 tablespoon olive oil
Juice of half a lemon
Salt and pepper
1 clove garlic, crushed
1 tablespoon slivered almonds
1 cup green beans, trimmed


  1. Pre-heat oven to 180°C.
  2. Place the fillet of salmon on a sheet of baking paper. Top with sliced tomato, dill, half of the olive oil, lemon juice and season with pepper if desired.
  3. Wrap baking paper around fish to form sealed parcel, place on a baking tray and bake in the oven for 10-15 minutes or until cooked to your liking.
  4. Meanwhile heat remaining oil in a frying pan over medium heat. Add garlic and slivered almonds to pan and sauté for 1 minute. Add beans and sauté for 2-3 minutes.
  5. Serve salmon with the beans.
