Ingredients

1 Tbsp Extra Virgin Olive Oil

2 Sticks Celery, roughly chopped

1 Leek, thinly sliced

2 Garlic Cloves, crushed

1 serving Formulite Vegetable lupin

500mL Water

1 Lemon, juice and zest

1 bunch Silver beat, roughly chopped

400g tin White beans

Method

  • 1 Heat oil in a large saucepan on medium heat.
  • 2 Sauté the celery and leek for 3mins until it begins to soften. Then stir through garlic.
  • 3 Pour in Formulite Vegetable Lupin soup, water, lemon juice and lemon zest. Bring to the boil and then reduce to a simmer for 5mins.
  • 4 Add in the silver beat and white beans, simmering for another 5mins.
  • 5 Serve in a large soup bowl for a nourishing spring lunch or dinner.
